Cheesy Salsa Meatloaf

What You Will Need

  • 2 lbs ground beef
  • 1 cup finely chopped onions
  • 2 eggs
  • 24 saltine crackers, finely crushed (1 cup)
  • 1 ½ cups Mexican style finely shredded cheese
  • 1 cup salsa

Make It

PREHEAT oven to 400°F.

MIX all ingredients together.

SPRAY meatloaf pan with cooking spray.

PRESS mixed ingredients into the meatloaf pan. 

BAKE one hour or until meatloaf is done (160°F).

TOP with more salsa and cheese, if desired, and cook for an additional 3 minutes or until the cheese is melted.
