Easy Blueberry Crumble
Ingredients
Filling:
- 2 cups blueberries (fresh or frozen)
- 1 tbsp lemon juice
- 2 tsp cornstarch
- 1 tbsp maple syrup or honey
Crumble Topping:
- 1 cup rolled oats
- ½ cup almond flour (or regular flour)
- 2 tbsp coconut oil or butter, melted
- 2 tbsp maple syrup or honey
- 1 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F and lightly grease an 8×8 baking dish.
- In a medium bowl, mix blueberries, lemon juice, cornstarch, and maple syrup. Pour into baking dish.
- In another bowl, stir together oats, flour, melted oil or butter, maple syrup, cinnamon, and salt until crumbly.
- Sprinkle topping over blueberries.
- Bake for 30–35 minutes or until the top is golden and filling is bubbling.
- Let cool slightly and enjoy warm—especially tasty with a scoop of vanilla ice cream or whipped cream!
