Easy Blueberry Crumble

Ingredients

Filling:

  • 2 cups blueberries (fresh or frozen)
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • 1 tbsp maple syrup or honey

Crumble Topping:

  • 1 cup rolled oats
  • ½ cup almond flour (or regular flour)
  • 2 tbsp coconut oil or butter, melted
  • 2 tbsp maple syrup or honey
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F and lightly grease an 8×8 baking dish.
  2. In a medium bowl, mix blueberries, lemon juice, cornstarch, and maple syrup. Pour into baking dish.
  3. In another bowl, stir together oats, flour, melted oil or butter, maple syrup, cinnamon, and salt until crumbly.
  4. Sprinkle topping over blueberries.
  5. Bake for 30–35 minutes or until the top is golden and filling is bubbling.
  6. Let cool slightly and enjoy warm—especially tasty with a scoop of vanilla ice cream or whipped cream!
