Red, White, & Blue Salad Recipe

Ingredients:

  • 1 cup fresh blueberries
  • 1 cup strawberries, diced
  • ½ watermelon, cubed (or cut into stars with a cookie-cutter for extra fun!)
  • 4 tsp. mint leaves, chopped
  • 1 large lime, juiced
  • ¼ tsp. sea salt
  • ¼ cup feta cheese, crumbled
  • 2 Tbsp. honey (optional but adds a lovely sweetness)

Directions:

  1. Prepare all your fruit — cube the watermelon, dice the strawberries, and rinse the blueberries.
  2. In a large bowl, gently toss the fruit with chopped mint and sea salt.
  3. In a small bowl, mix lime juice with honey until well combined.
  4. Drizzle the lime-honey mixture over the fruit and toss again.
  5. Sprinkle crumbled feta on top just before serving.

This salad is patriotic without being overly sweet, can be prepped ahead of time (just add the feta before serving!), and is loved by both kids and adults. The watermelon stars made with cookie cutters add a playful touch that little ones will adore, and the balance of fruit, mint, and feta gives it a deliciously unique flavor that makes it stand out on any holiday table.
